  • Smoking' Peppers, Ghetto Style

All of my jap plants died, so these are big ol' fat daddies from the grocery, quartered lengthwise, with the membrane and seeds still hanging on. Hell, I'm making pepper powder, it's supposed to be hot, right?

The habas are about half my home grown, the other half bought. Just cut in half.

Getting the Amazin Smoker fired up...

    Racked and stacked...

And into the ghetto we go!

I'll peek In on them in about 2 more hours...

Just simple folding, stackable cooling racks for pies, cookies, whatnot. I think I got these at the base BX.

Lookin good...Ghetto smoker should do the trick...
I smoke mine cut side up...They will some times fill with juices...Dont want that dripping out...I figure there is flavor and heat in them juices...Then I dehydrate them with the juices in the cut peps still...
Possible that the A-smoker wont bring on enough heat to make a difference...

I would love to do this, gonna be watchin' how they come out. I got some peppers without a plan.

You're gonna like this. My Japs were hotter than my Habs. Habs have "fruity" flavor. Good stuff!

Never thought of that with the juices collectin', mebbe give that a go next time... Prolly wouldn't have made a difference, but I have a foil "heat shield" over the smoker tray to maybe keep the cherry from "roasting" the bottom row as it winds through.

What a great idea, I'm guessing that would be a good way to cold smoke anything.

Looking great. Todd did a bunch of cheese in a cardboard box with the AMNS and it came out great

Ran out of smoke after 3 hours, so I checked the peppers, decided I wanted more smoke. That AMZS can kick it out pretty good!

Let it run overnight only burning one end, pulled them first thing this morning...

Now I'm gonna dehydrate the pizz outta them to grind up. BUT, I have to wait for the dishwasher. When I figure out who left my dehydrator racks in the machine dirty, heads are gonna roll!!!
