It’s been forever since I’ve rolled a fatty. Since the wife wanted ABT I figured I might as well make one to go with it.
Mild Italian sausage for the outside sprinkled with max hunky GP, then a layer of prosciutto. Then a bit of mozzarella, diced olives, sautéed bell peppers and onions, more mozzarella and olives and finally a dollop of pizza sauce.
Rolled up tight and in the fridge overnight.
Smoked somewhere around 225 until 160ish in the middle.
