Debated posting this here or in the poultry section.
Trimmed some chicken thighs and pounded to a mostly uniform thickness. Seasoned both sides. Light coat of BBQ sauce, smoked cheese, green Chile sausage from the store, julienned orange bell pepper, jalapeño and onion. Cooked indirect on the ceramic at 275 or so, bumped the temp up at the end to darken up the bacon. Was decent, not outstanding. Kinda an odd mix of ingredients but I was needing to clear the fridge some before going out of town.
