Boy, did I hit another home run this evening.
You know those stuffed grape leaves - Dolmades (or Dolmathes or Dolmas)?
Check this out.
Take 2 lbs of ground lamb, mix in some Cavenders, then lay it out to be wrapped into a fatty. Start by layering on some grape leaves, then a big wad of rice mixture.
Rice is pre-cooked in chicken bullion with a couple onions (sauteed in EVOO with garlic), toasted pine nuts, golden raisins, mint, dill, parsley, lemon juice, and S&P.
Wrapped in bacon and smoked with Olive and Grape.

Served with Greek salad and warm bread.
