  • Mahi mahi tacos

I haven’t made fish tacos in I can’t remember… but it’s been a few years. So I decided that needed to change and I defrosted some mahi mahi fillets and cut them into roughly 1 inch “matchsticks “ I have no idea what to call them. Extra large julienne?

Anyway, I tossed those in some olive oil and lightly sprinkled with taco seasonings. Then into the smoker at 250 for about an hour.

While that was going I made a spicy slaw. Bagged coleslaw mix, a couple chopped up chipotles in adobo and some extra sauce from the can, a squeeze of lime juice and salt to taste and then into the fridge while the fish finished. I also made some avocado sour cream, which is just a tub of sour cream blended with an avocado and a dash of salt.

Fish ready to come off the smoker

I let the fish cool a bit and shredded it all.

Tortilla, fish, slaw, sour cream. Mmm good eatin

need a larger spatula for early morning road kill removal.

As the venomous south American hissing skunk rat is growing fast and needs larger portions.

I had never had fish tacos until a couple years ago. Got some flounder ones in FL. My uncle had to talk me into them. Dammit, I have wasted alot of good eating up until then.

Same here Rich. I spent many years avoiding them, until I finally gave in and tried one. I was hooked after that.

First time I had a fish taco was in Hawaii a long time ago. Yuchh! Then I had one made from fresh yellowtail. MMMM. When the weedlines come in there's lots of dolphin. You either catch schoolies (small immature) or if you follow the frigates you see big ones usually a bull with two cows. I like the schoolies.

Bill... trust me. Admittedly yer a ways from the water- but if you get the chance.. that grouper taco was outstanding. We got walleye and perch up this way- another great choice.

If you have a Lucky's Steak House over your way check out the Starters section of the menu..Two big fish tacos made from a filet of grouper. I can only eat one... All for $9.50 warms up nice in the air fryer wrapped in foil.

I like my fish fried when it comes to tacos. Another flavor and texture thing.
