        One thing worth mentioning. You can cure the salmon and then either vacpack or wrap in clingfilm and freeze it.
        That way you can do a decent sized batch and just defrost and cook what you want for a particular day.

        If you're one of the lucky sob's who get to catch wild salmon - that might be the way to go :-)
