    Hi

    Anybody have any favorite ways to do hogfish (hog snapper)? I like kingfish in buttonwood smoke but hogfish is a lot lighter fish.

    Any suggestions would be appreciated.

      never caught any up here in Panama...now Snapper goes on the grill foil out..skin down...Cavenders & other juju spices... sometimes butter or olive oil...onyuns & shrooms!

        We always fried hogfish but that was only the 2 times we had it.

          It's hard to beat fried hogfish. Another option is foil with lemon, butter, and onions. Throw on the grill till it's white.

            I usually make fried fish tacos with it. It also makes good sashimi. It is so mild & white that it doesn't need much in the way of seasoning.
            Tacos: fry fish to a light golden color with panko, heat some tortilla discs, either corn or wheat, add some shredded cheese, lime juice, sweet slaw & fish and add some heat if you like. I usually put the heat in the slaw dressing.

              I have never had hogfish, let alone ever seen one. I Googled it... cool looking creature. Sounds like the flesh is similar to our flounder up here.

                They got you pretty well covered. Too light to smoke. I like it onna grille, S,P,Thyme and grape seed oil. Skin an scales on, skin side down. Real nice light white fish. Ya almost have to spear them, real light bite for a hook.

                      They are both "Tropical". They just loosened the regs on commercial Hogfishing. Buttonwood is the traditional wood the old timers used here. So much so that it almost went extinct. I believe it is protected still.

                        The Buttonwood that he is referring to is not the tree( like a sycamore which is protected & was over harvested ) but is a small bush type of mangrove tree that is common here in Florida. I've had a couple old timers tell me about using it for smoking fish.

                          I was referring to the mangrove. It may not still be protected but it was for a long time. Well wait, all mangroves are protected. It is what the "old timers" used almost exclusively for fish. When I was young My Dad used it...till we got our hands slapped by the "Grouper Trouper" (Marine Patrol).
                          The other thing that happened to buttonwood, it grows on dry land not the intertidal zone, and that's where they built all the houses.....
                          Fortunately, mangroves are currently protected by law in Florida to prevent future losses of these important coastal habitats.

                            Why would a Marine Patrol slap your hand about mangrove Buttonwood unless it was covered under a local ordinance as it is not a true mangrove and is not protected under the protection act and the protection acts did not go into effect til 1996. Must be why they call it the "1996 Mangrove Trimming and Preservation Act"
                            Mangroves can be trimmed under the law.
                            Check page 10 about Buttonwood.

                              Wasn't the 1996 law, was long, long before that. Thought it was a state law but might have been Pinellas County. Don't know but I've left them alone because of it. There wasn't many of them left in the 60's.
