For some reason, I got a bug up my ass for some some homemade chili. Not bean chili, but CHILI, Texas style. (Yes, I did live there for 10 years
)
Stared off with my D.O. and a Tbl of Crisco in the bottom.

Now, some coarse ground venison (2 # worth) from one of this years deer.

Cook this until it about 1/2 way cooked, then add 1 Tbl of Paprika and mix well.

Once mixed in, add the following.
14 oz. of Beef Broth.
8 oz. Quality Tomato sauce.
1 tsp Granulated Garlic
1 tsp CBP.
2 Whole Jalapenos.
2 Cups Water.
Spices and Japs added.

Bring to a boil the reduce to a simmer. Cover, and simmer for 1 hour.
After an hour, remove Japs and squeeze to get the juices out and discard.
Next, add the following spices and such.
1 tsp Granulated Chicken stock paste or 1 bullion cube.
3 Tbl Chili Powder.
1/2 Tbl Kosher Salt.
1 Tbl Onion Powder.
1/2 tsp Red Pepper Flakes.
1 Tbl Paprika.
1 1/2 tsp Cumin.
1 Tbl Homemade Sazon or Goya Brand.
1 tsp Brown Sugar.
The spices above.

Added to the D.O.

Simmer 45 minutes covered.
After that add the following.
1/4 tsp Cayenne Pepper.
1/2 tsp CBP.
1/2 tsp Cumin.
1/2 Tbl Sazon Mix.
The above added and mixed in.

Cook 30 minutes covered, then 15 more minutes uncovered.
All done, ready to eat or add to dogs.

Chili Cheese Dogs in the works.
All beef wieners, Homemade Venison Chili & Cheddar Cheese.
Went down great on a cold blustery day here in Minnesota.



Of course this can be made with course ground beef as well. Start with a good chuck and use a coarse plate 1/2"-3/4".
What I used for my Sazon was the following.
1 Tbl of each.
Kosher salt
Granulated Garlic
Cumin
Oregano
Paprika (Normally, use Annatto, adds nice dark color but I didn't have any)
CBP
Ground Coriander
Add this to some fresh ground pork sometime and make into patties and fry up. Start with 1 Tbl per pound and adjust to your taste.
