  • Cottage pie stuffed twice-baked potatoes

    I was digging through my recipe collection for something to mix it up a bit and came across this one. Actually it was labelled Shepherd's Pie Stuffed... but since it doesn't contain any lamb it's more correctly a cottage pie. Anyway, I swear it came from someone here but I didn't save an attribution in my recipe file, and I've searched six ways from Sunday here to try to find the original without luck. So if this seems like something that might be yours, or you know who's it was, please let me know!

    The original was pretty vague, just giving the ingredients with a "I don't measure anything, just taste as I go along," so I did the same.

    First I baked some potatoes in the oven, scooped out the insides to make mashed potatoes, and left boats of the skins. I'll save you the details on that since I'm sure you all can figure it out on your own.

    After the potatoes were done, I diced up a sweet onion and then cooked it with a pound-ish of ground beef and some chopped garlic in a pan until browned and the onions were cooked decently. Next I added some beef broth, garlic, onion powder, dried oregano to taste. Then I sprinkled on some flour and a little more water and let it boil until it was good and thick. Then I added some frozen corn and peas, I wish I'd had some diced carrots, but oh well, next time, and removed it from the heat to cool a bit.

    I preheated the oven to 325 and lined a baking sheet with foil and gave that a good spray of butter flavored cooking spray and laid the potato boats out. Then I filled each one just to the top with the meat mixture and covered that with the mashed potatoes. Finally I sprinkled some shredded cheddar on top.

    I baked them for about 20 minutes I think (wasn't really paying attention) and then turned on the broiler for just a bit to try to get the cheese to melt a bit more and some color on the mashed potatoes. As you'll see in the pics the cheese didn't melt very well and I'm not sure why but whatever, they tasted great.

        My Scottish Grandmother used to make something very similar but she would put it on mashed potatoes. I trying to remember what she called it. My Gaelic is very poor. I know it was different as she made a lamb version as a pie.

            Dang Pit that's some good looking grub. Curious as to the cheese you used . for a lovely looking preparation! *edit* no idea how to give points anymore. Ummmm I hit "like"

                My wife's family made something like that. They called it hamburger gravy. In fact the filling of this is so similar that when I had her taste it she said "you made my hamburger gravy!" Her family is from Irish decent so possibly a similar recipe to your grandmother's. No idea what it would be called in the native tongue though.

                  Just standard safeway pre-shredded cheddar. It's possible it didn't melt because the 7 year old left the bag open in the fridge and it dried out too much. Thanks for the like!
