  • Bacon meatballs

    So we are having a retirement party at work on Monday and having a luncheon with it. I've been trying to figure out what I was gonna make for it when I came across a bacon meatball recipe on Tasty Kitchen. I think I'm gonna make these on Sunday and bring in a crock pot for Monday. There isn't a sauce on this, it's just for the meatballs, so I'll probably just cook down a nice tomato sauce and then bring them in a crock pot...(with a crock pot liner, best invention since the crock pot!)

    1 pound Hardwood Smoked Bacon
    12 ounces, weight Ground Beef, 80/20
    8 ounces, weight Ground Pork
    2 teaspoons Salt
    2 teaspoons Smoked Paprika
    2 teaspoons Dry Oregano
    ½ teaspoons Ground Fennel
    ½ teaspoons Fresh Cracked Black Pepper
    ½ teaspoons Crushed Red Pepper Flakes
    1 whole Egg
    Mustang electric smoker
    King Kooker vertical gasser
    Charbroil silver smoker
    Earnhardt Jr smoker
    Brinkman smoke n' grill
    a-maze-n cold smoker rack

    Sounds tasty Maybe throw some chili sauce in your reduced tomato sauce

        Certainly sounds good, do you fry the bacon first?
        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

          Huh..cool! Prolly gonna wanna use some of your leaner bacon I'd think..what with the pork and 80/20 beef. Interesting! Be sure to post your impression!

              Moink Balls / Armadillo eggs

              I like to serve them with Dipping sauces.
              Here's a link to My "Moinkdonalds Balls" recipe.
              They do taste like McDonalds Cheeseburgers.

                Moink balls look good, unfortunately I don't have anything to reheat them in hear at work other than like a crock pot...

                The bacon you ground up raw, like the burger. Well the directions call for pulsed in a food processor, but I'll probably just pass through the grinder for my kitchen aide so it's more like the burger. I've been fortunate that most of my bacon has been fairly lean. Maybe I should go with a 90/10 burger mix...

                The sauce has me bothered, this isn't really like an italian meatball...but I could use one pound of the jowl bacon that I cured up like guanciale! I'll have to really think about the sauce for this, some salsa in it might be the trick...

                  I would do a really light glaze, like you would for ribs, and just drizzle it over the top and let it just dribble down.

                    By the spice mix I'd say it's going to be more of a Italian sausage flavor, and a tomato base sauce might work good.
                    I'd also suggest making a lot of extra's for taste testing, cause they sound pretty good.

                      Just out of curiosity shell - why do your meatballs have to be hot ?

                      You could do them like scotch eggs - which are generally eaten cold and with fillings that usually works best anyway.
                      That way you could just have a dipping sauce :-)

                        those round meat things look great. 1st time I made them and brought them in to the mess hall. I went back out to the lang to tend other thing in it's bowels. and went back in to taste one. they were all gone. I asked if they were good. and all their mouths were stuffed

                          That's what I was thinkin too maybe a lightly sweet BBQ glaze or even a brown sugar teriyaki.
