                        That looks freakin awesome! I'd hit that for sure, and if you want the gals at work to try it, just don't tell em what it is until they have tasted it already. But seriously though, what's wrong w/ hocks and chops? Nothing imho. I have been wanting to do this at work recently as we have an abundance of actual pig's heads. Would this method work the same way if I was to boil down skinless heads? I thought thats what 'head cheese' was.

                          mark and dave - yep, that's exactly how head cheese was originally made- with heads, hence the name. i am assuming that the head had enough colalgen to make the gelatin, but just to be sure, it probably wouldn't hurt to throw in a couple of feet as well.

                          erain - i know what you mean and i put it off for years because of the same reason. finally tried it and glad that i did! the kdis were pretty amazed to find out that the jell-o they love so much come from the same source. just different flavours.

                          lynsey - hope you try it and like it, and hope to see you at the FOTW. we can always use more members from outside the USA to help teach us about the foods of the world!
