Wild, Wild Rice & Smoked Chicken Casserole

  • Wild, Wild Rice & Smoked Chicken Casserole

    I started with some smoked chicken stock and smoked onions from my freezer, and the chicken I smoked on Thursday.

    Then I rounded up some wild rice, half n half, truffled cheese, butter, flour, salt, freshly ground nutmeg and pepper, and parsley.



    Melt 1/4 C butter



    Add those smoked onions



    Add flour



    Add 1 1/2 C half and half and smoked chicken stock



    Plus some dried mushrooms. Wait, did I forget to mention the mushrooms at the beginning? Ok, well, anyway, some mushrooms go in:



    Add 2 T Italian parsley



    And the smoked chicken




    Layer the rice, chicken and truffled cheese, bake 'til browned









    For some reason, a salad was assembled



    Then it was show time



    Now it's time for some Tito's!

      first off that plated pic has two of me favorite foods on it... WR, and sprouts... good stuff. not familiar with TJ's if the real deal or farmed rice. either way needs some

          Thanks, erain! I really don't know what sort of wild rice TJ sells, because until I read your comment, I guess I really didn't know there was more than one kind! But, it's not very expensive, so I'm guessing it's farmed wild rice.

          The sprouts were a surprise for my wife. I'm not a big fan, but she is. I think I earned some points from her on that one.

          Thanks, Fishawn! LoL, yeah, the salad course is the easiest part of making dinner b/c it's always salad for one over here.

          It is a great tasting dish, and one that allows the smokiness of the chicken to stand out, even in a pretty rich sauce, or gravy, or whatever it is called.
