Tried a new recipe today.A Mexican joint in town makes this dish.So I had to try itPickled the Onions a week ago for this.Mine didn't have the color I wanted,next time more Achiote paste.Flavor was good,made some re-fried beans and Mexican rice to go with.Will do it again.Also ended up with some Sausage FodderThanks for looking.

Recado rojo or achiote paste is a popular blend of spices from Mexico. Originally a Mayan blend, it is now strongly associated with the Mexican cuisine of Yucatan and Belizean cuisine.

The spice mixture usually includes annatto, Mexican oregano, cumin, clove, cinnamon, black pepper, allspice, garlic, and salt. The annatto seeds dye the mixture red, and this gives the meat or vegetables it seasons a distinctive red hue.

so what you've got there is probably an ancient mayan dish, though they might have used long pork (or is that the aztecs ?) - now that is very cool
