"Makes a Frenchman's belly ache" - or so Grandpa used to say.
Well, I decided to use up a nice ham bone and see if Gramps was still right after all these years
Started out with your basics...Nice meaty ham bone, peas, onions, carrots and celery

I hadn't used this particular brand of split green peas before, so I was a little surprised to find this inside the bag after I dumped the peas out (oot in Canada).

I use chicken base to make my pea soup anyway, so I figured it couldn't hurt any and tossed it in. Got the bone simmering first to loosen up that ham. Simmered for around 45 minutes.

While that bone was simmering I grated three large carrots, sliced the onions and celery and measured my spices.


Pulled the bone out (oot in Canada) and let it cool so I could get the rest of the ham off it and chuncked up.

Then it was "everybody back in the pool" for at least another couple of hours. I added some "Better Than Boullion" chicken base as well...don't know if you folks have tried this or not, but it's better than any canned chicken broth I've ever used, and takes up waaaay less space in the pantry.

Then mixed up a nice batch of sweet cornbread and after a couple of hours we were chowing down. This was a darned fine batch of pea soup....didn't make the belly ache as in the proverb, but the other end.....well....
