Sandwiches Cubanos - recipe says "oven," but you can do it in the pit, too.....

    The stuff above, made from Seville oranges, is wonderful, and very useful for nearly any Latin American cooking. It is totally unavialble where I live, but a couple of years ago, a friend sent some to me. I was able to try it for some wonderful pork barbecue:

    And have since looksed for an opportunity to acquire more.

    I think I struck gold today!

    the product description states that it is made from Seville oranges, so it is the real deal ~ perfect for what I am looking for. I've asked the beautiful Mrs. Tas to order 3 or 4 bottles of it, since it is so reasonably-priced, and we will see how it goes ~

        this one's a definite keeper for sure ~ if nothing else, at least do the pork roast as described above! the actual sandwiches are a great use for it and ceretainly recommended, but not required.

        if anyone wants to try this and has questions, let me know. it's very easy when one keeps in mind that it is a 3-stage thing: adobo mojado marinade/rub (up to 3 days ahead of time), then roasting the pernil, then assembling the sandwiches.

            These are on deck for this coming Sunday, so I'm bringing this to the top. I'll get a bone-in picnic shoulder and give it the full adobo mojado treatment of Friday evening, so that it will have a couple of days to soak in all of the Cuban goodness. On Sunday, I'll roast the pernil, using it as a foundation for some wonderful, savory, delicious hot Cubanos.

            If anyone's looking at a cold, snow-bound weekend, this is a great way to warm it up!
