Here is my Green chili reciepe. Ok I use either pork sholder or pork picnic, if I make beef I use Chuck roast. I slow cook it in a crock pot for about 6 to 8 hours. I put garlic and salt in the pot to flavor. I use anywhere from 8 to 12 yellow hots and a few long green chilis a few large tomatos, roast them out on the grill. Take the meat once it is ready and shread it into a skillet. once the chili, tomato are roasted i set them in a wet paper towel to cool and thus are easier to peel. once peeled i set the chilis and tomato into a food processor and make my salsa. Add salt,garlic to taste. once done mix everything together add some of the stock that the meat was cooked in to get the consistancy you want. Every now and again i will use tomatillos ( green tomatos) for more color. the recipe i just gave you was an 8# picnic. You will have to try different portions of the salsa to get it as hot or not as hot as you like, your left over salsa goes great on eggs in the morning. Good luck
