    Needs a layer of smoked cheese in here somewhere. Maybe some smoked Swiss!

    Wow!
    That's one Hell of a serious cheese ball recipe!
    Seemed a bit excessive (and it still is for sure) but the addition of the items like chorizo and pear and bacon in the different layers sound like they would really pair well and balance out the different layers of such bold flavored cheeses that otherwise wouldn't normally play well together.

          Jeeez... better have a lot of folks on hand! I gotta say I am intrigued by the flavors as well. Hmmm could prolly warm some smoked gouda for a layer. Happen to have just smoked 2 pounds last week :{)
