  • Pork Green Chili Relleno Cornbread Cobbler

    Wheeeww dayum...I just can't seem to leave the green chilies alone. Rolled a big pan of sharp cheddar and onion rellenos last night and had them in the freezer for today. Was too lazy to fire up the man skillet, so here's what I did instead.

    Put down a layer of pork green chili



    Then the rellenos



    Then cobblered that bad azz pan of goodness with cornbread.



    This turned out awesome!! If ya like green chili and cornbread, adding pork green chili and rellenos will rock your world!!

    My mid afternoon snack with a slice of cheddar, green chili, jap sourdough bread warm outta the oven.

                  Hey, thanks everyone - points and comments are MUCH appreciated!

                  Yeah... going a bit overboard on the GC... hard not to this time of year.

                  For the G-man, couldn't tell which bread recipe you are looking for, so here they are:

                  Green Chili Jap Cheddar:

                  I use Bassman#1 (sourdough) and after the first proof I add approximately:

                  1 C shredded cheddar
                  1/3 C minced japs (pickled although I have fresh in the fricken garden I just thought of! )
                  3 green chilies, chopped
                  good shake of jalapeno salt
                  good shake of Bassman ground pepper mixture
                  Substitute some good ancho or cayenne for the above.

                  I just bake according the to regular bread recipe


                  Corn Bread:

                  1 C corn meal
                  1 C flour
                  1/2 C sugar
                  1 T baking powder
                  1 t salt
                  1 egg
                  1 C milk
                  1/4 C shortening (I use veggie oil)

                  Bake at 425 for 20 to 25 minutes.

                  On this, after 20 minutes, I turned the stove down to 350, and it probably went another 30 minutes before the corn bread was done. Lots a juice in there with the pork chili and green chili rellenos.
