  • Sopa De Lima

    It means "Lime Soup" and Mrs. S and I first had it in 1979 on our first trip to Cancun. Cancun was very different then. The airport was still under construction and as we landed on a little airstrip in the middle of the jungle Mrs. S began to cry. Oh well, she bucked up and we caught a taxi for La Playa Blanca, one of only 7 hotels along the beach. The huge El Presidente had just been completed. The hotel was nice, and once she caught a glimpse of that electric blue water and snow white sand, well everything was all right from then on. Our first night we went to a restaurant called "Los Almendros" on the recommendation of an older couple from Germany that we met. We noticed this Sopa De Liima on the menu and we laughed about it. What the heck was Lime Soup? So we ordered a bowl to see. It was and is still one of the best things I ever ate. We were reminiscing about that trip and Mrs. S said, "Man I wish I had a bowl of Sopa De Lima right now." So since I had a trip to the grocery store planned anyway I decided to surprise her and make some.

    First you poach a couple or three chicken breasts in chicken stock along with an onion, some Mexican Oregano, and some Thyme.


    Then chop 4 scallions, 1 anaheim chili, and a bit of Jalapeņo.


    Saute the veggies in a bit of vegetable oil


    Chop a tomato. I opted to halve some cherry tomatoes, cause I like the texture better.


    Place the shredded chicken breasts along with everything else and 1/2 of a lime into the pot and simmer until everything is done. Last add the juice of 3 limes.


    Serve with tortilla chips. Very light and refreshing soup and absolutely delicious!

        The wife is enamored with a local resto's "tortilla soup". which I have decently duplicated with a pot of home-brew chicken soup the resto's salsa (mild) and some shredded "jack" (BORING!) cheese. I think I'd like this better. She won't. Ah well

            I've heard of it. Think I even have a recipe saved, that I saw somewhere. With this cold weather, I've been on a soup, stew and chili kick. Great way to stay warm.

            It sounds delicious. Thanks for sharing your story and recipe or version of it.

                  Looks great!

                  One of our local Mexican joints here does Sopa De pollo. The serve it and then squeeze fresh lime into it table side. They also add a chopped avocado at the same time, then top with cheese. The rest of the soup though is almost spot on to your recipe. They use thighs though and shred the meat.

                    Have had it with avocado and it is good. I just didn't have any.
