  • Smoked Rice

    Nothing unusual about this dinner burrito except the smoked rice.


    I'd never heard of smoked rice until cowgirl posted her's served with salmon. Instead of cooking the rice on the smoker, I tried pre washing long grain white rice and smoking it with my AMNPS. I stored it in a mason jar for a week and the flavor intensified as would be expected with smoked meats.


    I smoked this rice over Maple pellets for 90 minutes. I'm thinking of going with apple for 45 minutes next time. The reason I bring this up is that it has occurred to me smoked bomba rice might be phenomenal in a paella.

      I need to try that. Looks like you cold smoked the rice. After you washed the rice, did you let it dry or did the slight heat from the smoker dry the rice?

        Sounds great Gracoman! I usually just cook it while in the smoker.

          I smoked it while it was still wet. There was still moisture when I finished so I hung the bag to dry overnight, then placed the finished product in a mason jar.

            At the time, that seemed like it would take longer than I wanted to deal with it. I tried this as an experiment, because of your inspired post, and it worked well enough that I now have pre washed smoked rice available for my rice cooker at any time. Having said that, I've never cooked rice in a smoker so I have no comparison.

            Either way, thank you for the wonderful idea of smoked rice.

              You're sure welcome! I am a big fan of sticky rice... might try smoking a batch and see how it goes.
              I've smoked dried beans before with success. I place them in a colander and give them a stir every hour or so. They are nice to have on hand too.
