Made my first Jerk chicken, and I think it turned out pretty well. I did in the kitchen not on a grill, but anyone living in the PNW knoiws using an outdoor grill at this time is just not going to happen. I'll put up my recipe, and then explain where I will change it for next time.
Jerk sauce/marinade
4 skin on bone in chicken thighs
1/2 cup uncooked brown rice
1 can black beans
Sauce recipe..
1 whole orange(peeled)
1 bunch green onions
2 habanero peppers(seeds and all)
1/4 cup brown sugar
1/4 cup apple cider vinegar
1/4 cup soy sauce
juice of 1 lime
1/3 cup "jerk" seasoning spice
pinch of salt
Combine everything in blender or food processor until really smooth.
Marinate thighs overnight. Cook thighs in oven(350°) or grill outside(preferred method). Use left over marinade to cook rice and beans.
SERVE! In retrospect I forgot the garlic, and maybe could have used less sugar. Other than that it was delicious.
