  • Jerk chicken, with Brown rice and black beans.

    Made my first Jerk chicken, and I think it turned out pretty well. I did in the kitchen not on a grill, but anyone living in the PNW knoiws using an outdoor grill at this time is just not going to happen. I'll put up my recipe, and then explain where I will change it for next time.

    Jerk sauce/marinade
    4 skin on bone in chicken thighs
    1/2 cup uncooked brown rice
    1 can black beans


    Sauce recipe..
    1 whole orange(peeled)
    1 bunch green onions
    2 habanero peppers(seeds and all)
    1/4 cup brown sugar
    1/4 cup apple cider vinegar
    1/4 cup soy sauce
    juice of 1 lime
    1/3 cup "jerk" seasoning spice
    pinch of salt
    Combine everything in blender or food processor until really smooth.

    Marinate thighs overnight. Cook thighs in oven(350°) or grill outside(preferred method). Use left over marinade to cook rice and beans.
    SERVE! In retrospect I forgot the garlic, and maybe could have used less sugar. Other than that it was delicious.

      Looks awesome Thomas! Marinade looks good, get that garlic in there next thyme

      Who says we aint grillin this thyme of year Although, looks like we might be grilling in the snow for Christmas eve/day

        I really love beans and rice. no matter what the side is

        I have made “jerk” chicken a couple times. I need some tweaking.

                  Nothing beats good jerk chicken. I've been to Jamaica more than a hand full of times and yet to get a jerk sauce recipe. I ask. They just don't tell me! Tried one from scratch from a recipe online and it's just not the same! Looks like good eating though! Dominic
