  • Sour Cream and Brown Sugar Pancakes with Millionaire Bacon

    Mrs. Engineer and I like to go to Twin Peaks Restaurant...it is a from scratch kitchen, and their food is really good. Their Beer is also really cold...28° on tap, and they have TV's about every 3 feet (not to mention that their "Models" aren't tough to look at either). Mrs. Engineer will also go there to get take out occasionally (the food is really that good)...she will belly up to the bar and talk with the models (not servers) and have a beer while they fix our food to go. My point with this is that they have something on their menu that they call Millionaire Bacon...I always order this with my meal. It is a savory sweet and spicy bacon that I really like. I make a version of this at home and I use this as the glaze...it has the following ingredients: Brown sugar, honey powder (honey, refinery syrup), black, white, and green peppercorns, mustard powder, cinnamon, ginger, makrut lime leaves, cloves, allspice, cardamom.


    I also add some red pepper flakes, and a dash of chipotle and paprika...oven baked to sneak up on that perfect level of done-ness. Here I did about half for me and half for another project.



    Glazed to perfection!!


    Then I made some Kodiak cakes...from a box, these are really good.


    I slap a dollop of sour cream on 'em and then spread it around...




    Sprinkle it with brown sugar and plate up a side of Millionaire bacon...SO GOOD!!




    The brown sugar will disssolve into the sour cream...or if you dig right in there is a bit of crunch to the brown sugar granules. This looks really pedestrian, but it is really good. Thanks to Mark for the inspiration for some pancakes...I haven't had any for a while and I was due!

    Looks good. How is the texture of the pancake mix? No milk, egg, or butter? any baking powder? the label says add water only so is like a Bisquick type of mix?

    I'm still not sure on the sour cream idea but two of you have complimented it and not died so I am willing to new things. Might have to get all crazy and try mixing some light herbs in the cream with the sugar and then whip it all together. make a pancake and bacon taco!! I wonder if it would be good to dip the taco into a bowl of chicory coffee?
    You get soft and crispy, sweet and savory, a little spice and a bit of bitterness. All that in one bite. hmmm....

        The pancakes are delicious...There are three options on the box directions, and I always use option 3 using milk and an egg. The cakes are light and I generally cook them so they are crisp on the edges. I keep the batter a bit thinner but that is my preference. Mrs. Engineer grabs this giant box at costco and it lasts us quite a long time.

            I sampled bacon while I made pancakes...and then I had three pancakes with bacon. Plowed through half a lb. Easy!

                I tried the sour cream and brown sugar combo on a stick of Dave's Killer Bread french toast. Pretty good really, it works. Disregard the overcooked Kolbasz test fry patty

                  Thanks man. good alternative to try. Now I think I need someone to make some spicy maple sausage links. a "sweet heat" if you will. Maybe I'll try some of Rich's sweet/heat mixed with some Smitty's and add turbinado to the mix.

                  Hey! what if we added the sweet heat rub to the pancake mix??

                    That bacon sounds excellent cake mix too! Gonna hafta try the topping, sounds GuuD!

                          if you're adding eggs and milk - then all you have there is a packet of flour.
                          Why not just add some flour to eggs and milk ?

                          I mean, come on scott, you can cook !
                          You must realise you're just buying flour with a raising agent.
                          Fresh ground whole grains - you mean like everybody, always, everywhere, has made flour since the stone age ?

                          Anyway, that aside - great looking combo

                          Although I still find it weird that you lot treat french toast as a sweet item.
                          Actually had it for lunch saturday. Tomatos and ketchup are my french toast go to :-)

                            Good looking breakfast Dana! Here's a recipe for buttermilk pancakes from scratch if you're interested. I've been using the same recipe for over 35 years and never tire of it.


                            BUTTERMILK PANCAKES
                            2 Cups flour
                            1 Tbsp sugar
                            1 Tbsp baking powder
                            1 Tbsp baking soda
                            1/2 tsp salt
                            2 teaspoons instant yeast
                            1/4 C. water
                            4 Tbsp melted butter
                            2 C. buttermilk
                            3 eggs
                            1/2 C. heavy whipping cream

                            Combine flour, sugar, baking powder, yeast, soda and salt. Add buttermilk and mix well. Add butter and mix well. . Break eggs in bowl and add whipping cream. Beat well with fork. Add to batter. Batter may be thinned with buttermilk if too thick. Bake on hot griddle or frying pan. This batter stores well in the fridge for 3 or 4 days.
