Mrs. Engineer and I like to go to Twin Peaks Restaurant...it is a from scratch kitchen, and their food is really good. Their Beer is also really cold...28° on tap, and they have TV's about every 3 feet (not to mention that their "Models" aren't tough to look at either). Mrs. Engineer will also go there to get take out occasionally (the food is really that good)...she will belly up to the bar and talk with the models (not servers) and have a beer while they fix our food to go. My point with this is that they have something on their menu that they call Millionaire Bacon...I always order this with my meal. It is a savory sweet and spicy bacon that I really like. I make a version of this at home and I use this as the glaze...it has the following ingredients: Brown sugar, honey powder (honey, refinery syrup), black, white, and green peppercorns, mustard powder, cinnamon, ginger, makrut lime leaves, cloves, allspice, cardamom.

I also add some red pepper flakes, and a dash of chipotle and paprika...oven baked to sneak up on that perfect level of done-ness. Here I did about half for me and half for another project.

Glazed to perfection!!

Then I made some Kodiak cakes...from a box, these are really good.

I slap a dollop of sour cream on 'em and then spread it around...


Sprinkle it with brown sugar and plate up a side of Millionaire bacon...SO GOOD!!


The brown sugar will disssolve into the sour cream...or if you dig right in there is a bit of crunch to the brown sugar granules. This looks really pedestrian, but it is really good. Thanks to Mark for the inspiration for some pancakes...I haven't had any for a while and I was due!
