  • Canned carp/buffalo step by step

    Need to make room in freezer, badly! Took out 4 Ziploc bags of carp filets. Got to say there's less red meat in the buffalo. I tried to cut most of the dark red meat out. I could taste it on the last batch. Kids didn't seem to care.

    Fish cut into 1" chunks

    Made 3 different kinds. Pack jars tightly leaving 1" headspace.
    Plan was to put the plain in pints and flavored in half pints. Turns out we didn't have enough kids and the store was sold out. So everything but one mustard went into pints.
    Plain- 1/2tsp of canning salt in bottom of jars.

    V8- 1/2t salt
    1T veg oil
    1T vinegar
    3T v8 juice

    Mustard-3T mustard per pint

    Into the pressure canner. Follow your canners directions. I'll post pics when it's done. The mustard is an experiment. I love sardines in mustard or tomato sauce. I'm hoping these satisfy my cravings. The plain will be used in recipes in place of canned tuna. Made some delicious carp cakes that everyone including kids, loved.


    Now the hard part, waiting till tomorrow to try.

    Ryan, that is totally foreign to me in that I've never had carp. Looking at that, it reminds me of what someone would do with herring perhaps. I love pickled herring.

    You have peaked my interest. I gotta do points for this post and someone that has a use for carp. Don't get me wrong about carp but it's not regular table fare. We have them here in places, remind me of goldfish and if anyone has ever had a goldfish tank, they know what I'm talking about.

      You can pickle it, I've done it. It turned out rubbery. Something with how I processed it. Taste was identical to pickled herring. Carp is excellent and fun to catch. This stuff literally taste just like canned tuna. My 5 year old daughter will devour a half pint by herself and I'd swear she was a vegan most of the time.

          I'm excited for that one. I do like sardines in tomato sauce so I'm hopeful on the v8 recipe. Found it on YouTube. He put a slice of pepper jack on a club cracker then then the carp on top. That sounds good. I wanted to give a squirt of Sriracha but I forgot. Guess I have to go fishing again

            Haven't tried the plain yet. V8 could use more sauce flavor. Really good though. The mustard, well it needs I think double. the mustard flavor didn't come through. I'm hoping towards the bottom of jars will be better.

            Served the v8 on a club cracker with chipotle cheddar and Colby jack. A great little snack. Hazel got the Colby jack.

              Yeah, I have only caught them, and they're a bunch of fun! Never ate them though, always threw them back.

                That looks good in my book. Nice job. I'm thinking I'd like the mustard one.

                The kid on are crew has a salmon boat out of Manistique MI. (UP). He catches a lot of salmon, trout, and lake trout. I get plenty of smoked fish in the summer. But when he pulls out a pint of canned smoked trout, WOW its the bomb. You can put it on a cracker or just eat it right out of the jar.

                He does the same thing you do, packs jars not to full with chucks of smoked fish, then adds (this is where he didn't give me all the info)
                but I know he puts worcestershire sauce in it, and,and,and then he pressure cooks it...Whamo you got delicious...

                This summer I'm going to get him drunk and hopefully he'll spill the beans../
