  • Phosphate Question

    Ok so I have tried both Butchers Brand Prime Beef Injection on brisket and I have tried Kosmos Reserve Brisket injection and I can honestly say I dont like the flavors they inject into the meat. I don't know why I dont like them its just not the flavors I want. However, they both render a great bisket in terms of texture, tenderness and moisture. I believe this to be the work of the phosphates. So here is my question or subset of questions LOL:

    You can buy phosphates from both Butcher's or Kosmo's, however which one is better?

    Or are they the same?


    I am going to assume these are the raw phosphates with no seasonings at all. Also, the directions on each packet is different. One says mix 1/4C phosphate to 2 C water and the other 1/8C per 2 C water, but instead of using water can I mix with other liquids? instead of using water can I use a mixture of Stock, worsey, soy, and EVOO as long as it equals 2C of liquid?

    This question is so far out of my wheel house... I do not inject brisky's but if I did I would go with straight up beef broth with some seasonings.. Plus I thought phosphates make the meat mushy??

      Well again I have used both Butchers and Kosmos and they both have Phosphates and as it did produce a magnificent brisket i didnt like the tastes I would prefer just a beef stock, worsey, soy combo flavor profile as that is what I usually inject with my brisket with anyway. I figure I would try the phosphate just to see if I can achieve the same perfect brisket that I have seen witht these products

        Rich is more familiar with phosphates.. He should be able to help in the amounts.. Good luck brother.. Let us know haw it comes out...

            Rich is working on something n his lab.... he has the goods just needs some more times... Not sure what was in there but he told me to inject with beef broth... the flavor was great and not over powering!

                I mix the phosphate (and other stuff) with "College Inn Bold Stock" beef broth. Works pretty well. If you can find it, I think Publix carries it here. One of the things I like about it is no MSG.
                Or I make my own beef broth which is way better. Either way, no MSG.
