  • First Tri-Tip (steak?)

So I went to Costco on Saturday purely because i had read they had the elusive Tri-tip. Turns out what they had was 'tri-tip steaks' (not sure how they compare to an actual tri-tip) but I wasn't going to leave empty handed after the time spent finding a parking spot and then signing up (there is only 1 Costco in the whole of NSW!!!)!

Great marbling and price seemed reasonable.

Halved them (they were long narrow strips about 6cm wide and 25cm long), coated with a little Wasabi infused EVOO, and then coated in Tatonka Dust.
    Time for new plates!

Seared direct on the GA with CI grates and then indirect until desired internal.

One of the best steaks I have ever had...anywhere! I would happily pay for that in a restaurant.

Ken that there is some fine looking steak mate! Nicely done. I have to try the Wassabi thing. It sounds good. Can you post the recipe?
Smoke it.. and they will come!

Hi Rob, unfortunately no recipe to post mate, it is a variety produced by a company called Pukara Estate here in NSW (http://www.pukaraestate.com.au/conte...emium-oils.seo).

For my palate it works well with the Tatonka.

Still can't quite get over just how much I enjoyed this last night.

That looks fantastic. Like the wasabi idea too.

Don't give up on the tri tip. Ask when the shipments come in. I only saw the steaks the first time too. The second trip I moved some steak packages and found a whole one. No more in the back either. They apparently go quick.

We get those here in WA @ Costco also, they are excellent & great when cooking for a group of folks that like a range of finished temps.... Just pull them off as they are done to their liking..... Looks like you nailed it

Our Costco has both the Tri Tip roasts and the steaks. Some days they have both and some days they only have one or the other. I picked up a vacuum sealed bag of 6 roasts the last time they had them so I could package them individually in my freezer. I was sick of having to run over there when I wanted one and then they would be out. You get a couple of dollars off a pound when you buy them in the 6 pack.

Thanks for the kind words. The steak was fantastic. I actually surprised myself. I wasnt keen on going back to Costco and battling the hoardes again but given how good it was I will just have to put up with it. And those peanut butter filled pretzels make a good argument too.

There will be another one opening in NSW later this year so hopefully having 2 in the state will mean each one is less busy!

Try the Sea Salted Caramel if they have it.... Yet another reason to go.

I am a fan of salted caramel so I will definitely keep an eye for that!

Hopefully they will have whole tri-tip next time too.

Rarely see tri-tips here but when I do I snatch them up. Yours looks great.
