Long story short, my plans for smoking and/or grilling this last weekend didn't go the way I wanted. Weather and family issues got in the way. Not unusual. But, I had a couple of large Portobello caps that needed to be used or thrown out.
Did some googling. Shooting for something different. Here's what I came up with. Mixed 2 Tblsp of olive oil, 1 Tblsp of balsamic vinegar, a large pinch of crushed red pepper and a small pinch of black pepper in 2 separate quart sized zip-locks. Rinsed the mushrooms. Carefully cut the stems off and placed the mushrooms in the bags. Marinated them for 3 hours, flipping every hour. Ending with the gills up and as much of the marinade inside.
Drained them. Put them on a medium-medium high grill with the gills down for about 7 or 8 minutes. Flipped them, then filled them with blue cheese crumbles. Let them cook for another 7 or 8 minutes and let the cheese melt.
In the meantime, I cut a couple fresh Kaiser rolls and lightly buttered them. Put them on the grill to toast. Mixed up some Tabasco mayonnaise. Just mayonnaise and as much tabasco as you desire. Spread the mayo mixture on the rolls. Topped them with some fresh chopped chives.
Holy crap! I know this is a meat smoking forum, but this was way better than expected. The flavors worked well together. And you can serve it to those crazy vegetarian friends. We all have one or two.
