  • Tatonka Dust Thunderdome Vortex Seared Tri Tip Steaks

    Hot Dang! ............ This thing will get some ripping heat!

    Had some thicker cut Tri Tip steaks from some TT's I hacked up a couple weeks ago..... Fired up a chimney of charcoal & poured it into the Thunderdome Vortex ...... Had some Tatonka Dust & sea salt TT steaks sitting at room temp that got introduced to the Thunderdome Vortex......

    I didn't get a temp at grate level (prolly would have melted the probe ) butt the lid thermo on the Performer read over 525* .... Plan was to hit them hot & fast & then finish indirect..... Sumbitch was HOT! .... They got seared quick & had to pull 3 of them after a flip after 2 minutes & aboot 2 on the other side, 2 had already read 135* on the Thermapen .... So finished the rest indirect to 135*ish & pulled & then put the thin ones for me wife back on again to 1,965,872,106* cause that's the way she likes them ...... Basted with melted butter & Worchestershire towards the end of the FAST cook & after resting.... Turned oot really nice!

    The Thunderdome Vortex is a pretty cool addition to the cooking arsenal

    Cut up some cubed potatoes, coated with EVOO, sea salt & CBP & roasted covered for aboot 30 minutes @ 425*, then added more EVOO, Mad Hunky, 1/2 pound of chopped bacon, chopped garlic & olives, cream cheese & shredded cheddar cheese...... Mixed well & roasted another 10 with the lid off...

    Nothing quite like cooking at 180 MPH.
    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
    My best asset however is the inspiration from the members on this forum.

      The Vortex does rock! I used mine last week on a London Broil for school. I will post it when I get time.
      Look good Fish, love the way you can scorch the meat in the middle (of the grill) and slow roast on the fringe!

          Its a metal "ring" or "tube" used to hold charcoal or briquettes. I have only used mine aboot 4 times butt it functions as both a concentrated searing zone or a shield from heat when cooking indirect. Made by Smoked-Meat member Thunderdome. Pretty slick accessory.
