  • Robata Grilling

Went to a restaurant a couple of weeks ago. Sushi Robata here in Carrollton, Texas. Great sushi place, and all 4 of the chefs are from Japan. A real rarity these days. Most places are run by Koreans. Nothing wrong with that, as I understand that sushi is more popular in Korea today than it is in Japan. Anyway, I noticed that they had a small card with items on it like chicken hearts, chicken gizzard, chicken liver, beef tongue, etc. I asked the waitress if they had a Robata grill and she said that they did. I didn't order anything that time, but I plan to go back and order some of the Robata items. This is a traditional Japanese grilling method and is extremely simple. I just wonder if anybody here has ever tried it?

Here is a very good article describing the method and some recipes:

Just another technique for smoking meat. Interesting.

Interesting read. I think someone here has done something similar but it was not called robata grilling.
