    I had planned on doing something quite different but Smooth Smoke's Kefta post changed all of that. I took that wonderful recipe and ran with it a bit.

    Lebanese Kefta served Greek Gyro style with fresh Tzatziki Sauce in Grilled Indian Naan Flatbread

    It just don't get any better than this



    And for dessert... USA's Pennsylvania Dutch Shoofly Pie served with vegan almond milk ice cream. I bake one every year when it's Derby time!!!

                            Things got very busy this weekend and so did not have time to put together an Indian spiced brisket as intended. This was a Bob Ross "happy accident" because the kefta kebobs were a revelation. I had originally planned to go with real Sri Lankan cinnamon mostly because I was afraid of the stronger tasting and more readily available Saigon. No time means use what you gots so Saigon it was. My fears were unfounded as the cinnamon flavor was exactly as you described. Not overpowering but there.

                            I did, however, somehow manage to get a hold of some very fresh mint (the smell upon opening was very strong) and I probably should have used a bit less of that but no matter.

                            I also added a fair amount of smoke during the cook.

                            This one's a keeper.
