    So I'm taking an old wore out grill to the recycler and couldn't part with the cart. So I made a smoker to wheel around and show off. The first couple of runs proved I can keep a good constant temp. Ribs were really good! Trouble is now it gets to hot. I have to keep the doors cracked to get it cooled down. Question is Where do I enlarge venting? Front, back, sides, both, what...? Any thoughts will be willingly considered. Gracias Amigos!!!

    Hi Fig Welcome. I don't have any clue but I'm sure someone will be along to help. I do everything in a Kamado or on a firepit. Nice looking piece you made.

      I don't know so much about temp control on a gas cooker but with wood/coals you just cut the air intake to bring down temps.

      to Smoked-Meat. And great looking smoker. Careful to not burn it down.

        I too don't know much about temp control on a gas device, but it would seem to me the easiest approach would be to put and adjustable regulator on the gas line and lower the gas pressure. Seems like you have too much burner for such a little space, so reducing the gas flow should lower the temps.

          Yep need a smaller flame or a thermostat to turn it off or on. Seen it done with an electric set up but not gas. Beautiful looking smoker BTW.

            My guess it it won’t matter for long. Keep it well away from your house. And welcome.

              welcome to de club.. a chimney with a damper on it may help may be a 3" hole with a pipe through it are large might be better. that would allow the heat to escape and can be regulated some what.. But as Rich stated, keep the tinder bx away from every thing you do not want to catch fire. good luck.

                You know as I re-read this post, Well I'll just say it. We weren't helpful at all. At best we said , and at worst we told this person they were gonna burn up their smoker. I am looking at this somewhat tongue and cheek, but I can see why there are only about 20 of us out of the 1000+ members we have that comment. LOL

                  I would suggest a low pressure burner. I will look closer to exhaust but what you have should be OK. Small flame and thin smoke is what your after. Run exhaust wide open and control heat with flame.

                  I like wood smokers.

I want to see the video of it when he gets it to hot and burst into flames. from what he says it gets HOT. plus look at the burner and the proximity of the wood (has to be very dry wood) and radiant heat will do the trick. or even some oil splatter from from the pan. most all wood smokers I have seen are pretty cool. But the fire is away from it and smoke and heat is drawn in through duct work are piping.

                        No skin off my nose. I just found it funny. I can honestly see that the majority of us are the definition of "STAY OFF MY LAWN" curmudgeonly old/middle aged men.

                            And some are just... experienced. Only way I’d have a wood smoker is a small building. Walk-in sorta thing. And the fire/smoke thing in the center, unconnected to the structure.

                            That said...your unit? I’d go electric. Still not 100% worry free, but much more.

                              alrighty then.. from what I have read. just buy pre-smoked things at Krogers.. this thread has had the most replys in a while. Fig would have us rolling on the ground if he posted a pile of ash and said he tried to smoke some Dino's.
