Thanks to no power outages, I ended up with a smoked Pork Butt @ 195* this morning
(set it & forget it....
) ..... No tending of the fire needed, no waking up, just sleep.... 
This Butt got an injection of about 8 ounces of Orange Juice, Worstesechire, Soy Sauce, Garlic Powder, Sweet & Spicy Tabasco & Rice Wine Vinegar..... The injection flavor tasted right, but could have used a little more "salt" for me, maybe more Soy next time.....
Asian Style Rub
3 T 5 Spice
1 t Brown Sugar
1 t Splenda
1 T Sea Salt
1 T Lemon Pepper
1 t Crushed Red Pepper
.5 t Garlic Powder
1 t Mace
This really turned out good & a nice different take on smoked pork.... The Pecan smoke was nice & light & the bark had Awesome flavor!
The maiden smoke on the CookShack Smokette, in the rain...... I'm telling you all, set it & forget it smoking is all it's cracked up to be...
