    Curious if anyone has a recipes similar to the "Freirich Porkette" (Smoked Cedar Trimmed Pork Shoulder Butt) that is sold on the north east coast.

        Looked up their website. Doesn't say what their smoke is but it looks well trimmed & sliced. They aren't sold here locally. What can you taste in the smoke. I'm guessing maple?

          I think he had a typo......spell checker.....from their website....Porkette® Smoked Cellar Trimmed Pork Butt. Which probably means that ol man Julius Freirich trimmed the pork butts in the cellar.

          Interesting that most of the corned beef that is consumed on St. Patty's day in the US comes from them....
