    Works great. From chilled temps to serving, depending on amount of food in water... 20 mins to 45 mins. Of course...double packed half slabs maybe a bit longer. Great way to go.
    Sorry.. I didn't go into as much detail I was just trying to get an idea across. Thanks for the input. I still prefer the re-heat on the grill approach if possible

      Thanx everyone for the great info and ideas. I'll be doing the ribs Friday afternoon. It'll be close to 35 degrees, so shirt sleeve weather is here for a day!

      After smoking them, they'll be vacuum sealed and kept cold till I get to his place. He has an oven to reheat in. I'm also smoking an extra rack for him to keep for another day. Not sure they'll last very long, though...

      Thanx again... Qview will be posted in a new thread documenting the first smoke for the WSM.
