  • Dr. Pepper injected pork shoulder

I picked up a 7 lbs. pork shoulder at my local market. I decided to try a Dr. pepper injection I heard about. Here is what is used. (click to enlarge)

It also had some worchester, but I forgot to put it in the pic.

The roast came without the bone and it was cut all splayed like. That made it kinda of hard to inject. Here is a pic after I injected, rubbed, and tied it.

I smoked for about 9 hrs. at 225. I spritzed it once an hour with an apple juice , Dr. Pepper, and water mix.

When it hit 165 I decided to wrap it in foil. I was bouncing back and forth on wrapping it or not, but went with my gut and wrapped it.

When it reached 205 it gave it a rest in the cooler for an hour.

Here it is after a rest

I was also able to collect a cup of pure golden love.

    Pulled and Juiced!

I also smoked some spares for my son.

I used the 3 2 1 method. They came out excellent!

    Spares are his favorite.

I liked the Dr. Pepper solution with the pork shoulder, it gave it a mild sweetness that I liked. I will use this again in the future.

That does sound interesting. Have seen a few posts on here about doing that as well. Was that a straight Dr.Pepper injection or did you mix it with anything?

In any event, it looks like a total success

It was a mix of apple juice, dr. pepper, salt, sugar, water, and worchester

I used regular dr. pepper. I was cautious on the ratio of soda I added. I think next time I will up the dosage of d.p.. I also spritzed the pork with a dr. pepper/apple juice combo on the hour.

Looks great! I have used Coke for a glaze on a city ham before and have also heard of people using Dr. P and Root beer. Will have to try the Dr. P for a butt one time!

I always inject my butts with cherry DP and apple juice mix, about 50/50, or 60dp/40aj. I also use it as a spritz during the smoke. That acid really helps tenderize and that sweet, beet-like flavor is a great contrast to my sauce. Which has a little heat at the end. That pork and those spares are making me hungry and I just had breakfast! Nicely done!
