        Spares are by far and away my favorite. I go through all the ribs at the store and buy the slabs that are the thickest and meatiest at the rib ends, then trim em as St Louis ribs. If you take your time and choose em well, they're much meatier than any BB ribs I've ever had, and you've got the rib tips to fix along with the ribs. Always at least one really good sized solid chunk of meat there, and I eat most of the cartilage in the rest of the rib tips. They used to just say shark cartilage was good for you, but now they're using all kinds of cartilage in food supplements. Why buy the supplements when you can get it in your BBQ?
