Well the family was asking for Nachos so I figured I would sacrifice a few of the green onion sausage patties that I had made up. turns out to be a very very good choice for nachos!!
First though lets do the cheese sauce. Tried out Vermin99's version to start things and then took a turn to my likes....
Started out with 2 Tbls butter and 2 Tbls flour, got a roux going.

To that I added 2 chopped jalapenos

Added 2 cups of milk

To that I added a block (8 oz.) of Hot pepper cheese. and a 1/2 block of cheddar.

Melted everything down and got it smooth, then added a drained can of regular Rotel tomatoes.

Got it all hot and then let sit for about an hour to develop flavors a bit more! Turns out to be a very good sauce. I think I like the version I have done in the past with out the flour. But it was nothing to turn down!!
Now onto the sausage! Got out about a pound worth and into the skillet!

All ground and browned!

Now time to start building!! Chips, sausage, cheese!

Top that with tomato, black olive and a bit of sour cream!

Oh yeah these were killer...If you have any of the green onion mix sitting in your cabinet or freezer you need to give this a try!! A great way to sit back and enjoy the hoops action on the TV! thanks for viewing!!
