  • Smok'in Meat Loaf

    My wife took over the pellet smoker yesterday and managed our dinner to a great conclusion. She prepared a terrific meat loaf dinner. Here's her recipe.

    The following are the ingredients:

    • 3lbs 80 or 90 per cent ground beef
    • 1lb. ground pork
    • 2lb. ground chicken or turkey
    • 1 very large sweet onion – and I mean big or 2 big ones
    • 3 to 4 green bell pepper or poblanos
    • 1 ½ cups of chopped celery
    • 8 oz or more of your favorite BBQ sauce – I make a home one and use the entire recipe
    • 6-8 tablespoons Worcestershire sauce
    • 4 tablespoons Kosher salt
    • 8 tablespoons of Yellow Mustard
    • 6 tablespoons of your favorite rub recipe within the meat mixture
    • 2 Tablespoons of cayenne pepper
    • 4 tablespoons black ground pepper
    • 1 ½ cups bread crumbs
    • 6 eggs
    • Sprinkle your rub on the top of the loaf
    1 can of tomato paste

    Normally, my wife does not usually measure ingredients, so everything can be done to your taste. And, the mixing of the loaf is all done by hand.

    Meat Loaf Stuffing

    • 1 lb. shredded mozzarella
    • ½ lb. of provolone
    • 1 lb. fresh spinach and one pound of frozen spinach thawed.

    Great job! Love smoked meatloaf. For me, I find that I enjoy the meatloaf better when I make loaves, instead of in a pan as I increase the surface area for smoke penetration using a loaf over something pushed into a pan. I find that making several small loaves provides a better end result over one big one. But any smoked meatloaf is better than any cooked without smoke in an oven.

      I wish that I could do that too. But this is HER way and HER cook.

        Indeed I do! Happy Wife = Happy Life! No worries, just telling you how I like it and found additional flavor doing it in loaves.

          Smoked meatloaf is Great. I am going to try and be a diplomat here a bit. I am a tweener, meaning I am right in between what you guys do. I punch the holes the foil pan, I smoke, I flip and I go back to the pan.

          Start:



          Flip:



          Put back in the pan to finish, well some more rub and or sauce if you'd like:



          Sorry, not trying to hijack this. Just saying there is an in between that works great for us. It also freezes very well vac packed.

            all methods will work.. just do what works for you, as long as it is in a smoker and not the oven!

            And I am not trying to high-jack this thread either.... sorry about that. Back to your scheduled programming.
