How many lbs of shoulder for 300 people

    So if I need 15 shoulders, I might as well do 5 shoulders a day for 3 days?? Wow... The pulling and the vacuum sealing would take a LOT of time huh?

      Yep, why folks have said here that a #10 pork butt at $1.50 a lb sells for +$30 cooked and pulled in a pan. Vacupacking is more time and freezing all of that is a lot of space. Plus delivery and site setup.

      Many guys here have done these big cooks they can help you out on the logistics.

      When I do pork butts I do 4 at a time and add $7 each over the cost of the meat. Since I'm doing one for myself and three for friends, I don't charge for the pellets I use, just the foil, foil pan, rub, and a container of special sauce I make. They come by and pick them up in the foil pan unpulled after resting in the cooler for a few hours. If I were to do 4 butts for someone I would have to add $25 to the total order for pellets and $3 more per butt for my time.
      That would be $60 for meat, $40 for materials, and $25 for pellets. Pretty much double the cost of the meat. And I'm not prepping, pulling, delivering, serving.

      I really have no idea what is right, I'm just tossing my ideas out there.

        Ohh there is a neat trick someone here mentioned. Get a plastic container like a gallon milk carton, and cut the top and bottom off and then you have a ring of plastic. Slice it and then you have a 'tube' you can put in the top of the bag so you can add the meat and not get the top inside of the bag dirty. I have had my tube for almost a year now, just toss in the washer and keep for the next use.

          As far as bagging, I like 2 to 3 pound bags, but you can go bigger. I flatten them out for better storage and reheating.

                The pulling is the worst part for me - get help doing that or get a pork puller (www.porkpuller.com or http://www.amazon.com/Shredder-Potat...ds=pork+puller) I've used one and you can do a butt in about 3 minutes or less. With all the help from this forum I'm sure you will do fine and the folks at church will not go away hungry!!
