Ok, so I am at Costco last weekend and they had beautiful 1 1/2" thick Loin Chops on sale for $1.98 a pound, so I bought a package of 10. I have recently ordered some North African and Mid eastern spices and decided to do an experiment. So, I packaged these up in packages of 2 with different seasonings. These are all headed for he Sous Vide cooker. The seasonings were 1.Salt and Pepper and Sumac. 2.Salt and Pepper and Sage. 3. Bolner's steak seasoning. 4. MHGP. 5.Za'atar.
So first for dinner last night I sous vide the Bolner's seasoned pack at 136 degrees for 2 hrs. 45 minutes. They then went to the gourmet grill over the vortex for a nice sear. I set them with the fat edge down first for about a minute, and then about 2 minutes per side. Delicious! Super juicy, super flavorful. Can't wait to try the others.
