  • Carnitas and Breakfast Sausage

    Took advantage of the sale on pork shoulders and picked me up 2 two packs.



    Cut about 6 lbs to use for carnitas


    Placed the pork in to some lard heat on high to get some color


    Then lowered the heat, added some garlic, a sliced orange, bay leaves and a couple of cups of water and simmer till the water evaporated


    After the water evaporated I added a Coke with real sugar, and evap condensed milk and cooked till the pork was fork tender. Then cooked the pork in a CI skillet till the pork to get a little more texture on the outside.


    Made tacos with cilantro, onion, avocado, and salsa for garnish, and nopales and refried beans for sides.


    Ground the rest of the pork and looked up a Jimmy Dean clone recipe for breakfast sausage and sort of followed it.
    This morning I cooked a little of the sausage, threw in a few eggs and cheese


    and made breakfast tacos

      Out of the park cooks! Gotta try those carnitas some time. Wow.
      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
      My best asset however is the inspiration from the members on this forum.
