  • Pork cushion for sausage?

    Does anybody here grind up pork cushion for sausage? I assume it will work pretty well. They opened a Restaurant Depot here and I finally got there to look around. Picked up 12 lbs of pork cushion and a few other things.

      It's been quite a while, seems like I remember it having a lot of connective tissue, sinew in it. Not positive but I went back to pork butt.

        Your good to go, pork cushion meat comes from a pork shoulder picnic which is cost effective, but it contains more fat than other cuts.

                  I have used it and works fine. What did you pay per pound? it is usually the same price or slightly higher than a whole butt.

                    This was about a $.15 cheaper. I got it because it was boneless...and hell, I like the name! Thought since it's just another part of the shoulder it should work fine.
                    Thought I might like to use some of it for carnitas too.

                      Update: Got the breakfast sausage made from the pork cushion. I used 7 of the 12 lbs for a JD clone. Stuffed in sheep casing. Ground it all and froze the remainder to put in some sticks. The sausage turned out great.
                      Oh...the other bags are some bean soup from a ham bone that was hanging out in the freezer.

                        How was the fat content? Ken mentioned it's a little fattier then a butt, but I thought the cut was lower in fat. I've never seen one for sale around here.

                          The ones I got were leaner than butt. There was q fair amount of connective tissue but I ground it nearly frozen so it ground really easily. My biggest problem was I should've add water when I stuffed. The mix was a little tight and it blew out the sheep casing. I'll get the hang of it one of these days.
