I saw this on a video somewhere and had to try it. It's so simple and so good. I'm betting someone here has done them and can attest.
Ingredients:
Dill Pickle chips, drained
Bacon
Favorite Rub
I took the bacon and cut it in half. Took the pickle chips and drained them. Wrap the bacon around the chip and add some rub. I put some Slap Yo Momma on these.

Set up the smoker at 275° and put them on seam side down. The recipe I saw said 45 minutes to get crispy bacon.
It took longer for me to get the bacon where I wanted it, crispy wise. 1 hour and 45 minutes worked for me.

When they were done, they were so good. I didn't even bother with any sort of dipping sauce but did give some ranch dressing a shot as my son was using it for his. It was good and works. He begged me to make more on Christmas but I'm already juggling stuff to take to my brother's house. Anyway, here's the finished product:

They are definitely a keeper and would make Excellent appetizers over the holidays. Thanks for looking and try them if you haven't already.
Now, back to tending the lechon asado I'm smoking today.
