  • Smoked Bacon Pickles

I saw this on a video somewhere and had to try it. It's so simple and so good. I'm betting someone here has done them and can attest.

    Ingredients:
    Dill Pickle chips, drained
    Bacon
    Favorite Rub

I took the bacon and cut it in half. Took the pickle chips and drained them. Wrap the bacon around the chip and add some rub. I put some Slap Yo Momma on these.

Set up the smoker at 275° and put them on seam side down. The recipe I saw said 45 minutes to get crispy bacon. It took longer for me to get the bacon where I wanted it, crispy wise. 1 hour and 45 minutes worked for me.

When they were done, they were so good. I didn't even bother with any sort of dipping sauce but did give some ranch dressing a shot as my son was using it for his. It was good and works. He begged me to make more on Christmas but I'm already juggling stuff to take to my brother's house. Anyway, here's the finished product:

They are definitely a keeper and would make Excellent appetizers over the holidays. Thanks for looking and try them if you haven't already.

Now, back to tending the lechon asado I'm smoking today.

shoot... that sounds great! I love deep fried pickles and I bet this is two steps above that with the bacon and the smoke

      Thanks for the points Mike!

But on to more important things. I love fried pickles as well. So I guess you love these.

Next time, a slice of jalapeno is going there with the pickle and we'll see how that goes. I think it will work just fine.

I made some using bread & butter pickles and some with dill pickles. They were good. I found using reg sliced bacon worked better than thick sliced bacon and in a single layer. I also cooked them @350°

They look good, but my lazy ass would just fry some bacon and grab a jar of Nalley or Vlasic from the fridge and park my butt on the couch.

We love bacon wrapped smoked dill pickle spears with Mad Hunky sprinkled on the bacon! Your bacon wrapped pickle chips would be great on a burger!!
