  • Pulled Bork

    Since the flavors of pork and beef meld so well when making sausages I was thinking they might go well togther as just pulled meat. So todays adventure is just a small butt and small chuckie rubbed and into the smoker. Using apple and hickory and will foil and pull later today when they reach 200o + and mix together.

                          Ran outta time last night to finish the post so here goes.

                          After about 7 hours in the smoker the internal temp hit 160o so time to foil and add some mop.



                          Let it go for about 4 more hours and the butt bone pulled right on out. Chuckie was smaller than the butt so it had to be ready also.



                          Both the chuckie and butt pulled easily. Poured the drippings into a bowl and into the fridge to solidify the fat. Skimmed off the fat and re-introduced the liquid gold to the meats.



                          I had a quick taste of it before I hit the sack last night and I really like the flavor combination. Brought some into work with me today with some good ole traditional white bread for a sandwich for lunch. Looking forward to it! Forgot to bring a little finishing sauce with me but should still be edible. I'll try to get a pic of my sandwich later.
