  • Pork Butt Medallion(money muscle) and some Sausage Burgers

    In between shoveling from the blizzard i was making some italian pepper sausage and decided to do the money muscle seperate-which i do when i am smoking/grilling something else...

    This link sorta shows the part of butt for the unitiated..

    I removed the muscle and gave it Mad Hunky rub overnight.Muscle weight was 1/2 pound








    Rest of the butt is italian pepper sausage...







    Made some sausage burgers and grilled both items at 350 degree on WSM with cherry wood..






    WSM setting up....I planned ahead and used tarp on left to cover smoker..




    Above the WSM





    Put some sharp provelone on and munched












    I didnt have homemade sauce so i took a almost expired sweet baby rays and added my neighbors honey and some apple cider vinegar





    Man this part of the butt is always awesome....









    Almost gone but worth it...

        Wow, that looks great!!

        And double points (when I can give them again ) for smoking in that kind of weather.

              That's about as fine a looking meal as I've seen in a long time! I have to give you for an outstanding plate and for smoking in that kind of weather.

                          Now that's something I have never done. Cool! Pulled it out after, sure- but never thought about before. Hmmm - bet that would cure up into something tasty too... a coppa or such thing. I gotta give some "out-of-the-box" for this!

                              Looks like you get a nice lean chunka pork by sepperating it that way. I had read that before but never considered it as Im always cookin the whole butt at once. He has a lotta great info for competitors.
