  • Ribs and Kapusta

    A Polish dish from my moms side of the family(how many of us does it take to pull a membrane?). The kapusta is shredded cabbage simmered with vinegar, brown sugar, salt, CBP, carrot, onion, garlic and optional caraway seed.

    Ribs were rubbed and smoked for about 4 hours then removed and cut into 3 or 4 bone portions and into a roasting pan. Then the ribs are smothered with the kapusta and stock, covered and into a 250 oven for 2 more hours.



    Had my mom over for dinner and she loved it and so did me and the wife.

    Man Lou.... That looks and sounds fantastic.... Got that planned for a cold rainy October Sunday night with a football game... Any specifics on measurements?

      Man that brings me back... Used to have Polish neighbors when I was a kid. Pole and Hunky foods are pretty darn close anyway, but that was the first time I had the kapusta. Tasty stuff and a nice combination of flavors there, Lou! Bravo!

        I'm not much for measuring but I started with a 1/2 of a medium head of cabbage and just kinda thru stuff in after that.

                  Yeah..... I would call that not much for measuring...... ....... I will do a Google search for it, or maybe someone has one that they would share..... I would like to try this in the Fall...... Looks Great Lou

                    I guess I should put a little more effort into your request so here is what I think I did.

                    1/2 medium head of cabbage shredded
                    1 carrot grated
                    1/2 medium onion diced
                    2 cloves of garlic crushed
                    1 tbls brown sugar
                    1/4 cup of white vinigar
                    1/2 tsp caraway seed
                    1/2 cup of water or stock
                    Salt and pepper to taste

                    Combine and simmer for 1 hour. Uncover and simmer to reduce liquid to just enough to keep it wet.

                      Thanks!... Can't wait to try this on a cold Sunday night. I cook most stuff apparently the same way you did on this... (A. Little of this and some of that)....I appreciate the recipe Lou.
