  • Boneless Turkey Breast

    I have a small boneless turkey breast defrosting in the fridge. I'm looking for ideas. I'll probably do it on a fairly high heat. I'm considering sticking it on a Trompo and catching the drippings in the pan. I've also considered rolling some bacon in poultry seasoning and doing a bacon weave blanket on top. I can set that on after it browns a bit. Can I do a turkey bacon gravy from the drippings safely? I just read Rich's turkey post regarding poultry safety protocols. Had a friend out West who's parents owned a turkey farm. His Mother made great fresh roast turkey. (they raised and sold 50k a year) she never stuffed them and cooked them fast at 425.

    Any thoughts, ideas or advice would be appreciated.

    If yer gonna wrap it take the skin off if there’s any. That’ll just become goopy rubber stuff. Altho..the browning might work. But I’d think you’d be close to overcooking at that point.

    I’d think the gravy’s no problem. It’ll be simmering in the pan. Might add a tad O water or..white wine? along the way to keep it from over molecular exciture :D

      I like to rub them with my beef rub and smoke till done. Sliced real thin for sandwiches. Gets eaten fast.

        I say keep it simple and do it Texas style. I copied this guy and I was a f'n hero. People loved it.

          This turned out to be a Butterball ripoff. Boneless skinless turkey breast my a**. I should have looked at the package more carefully.

          It was identical packaging except for one thing. On the price tag was the word mix. It fell apart into individual chunks of light and dark that wasn't cut. It was ripped. Inside the wrapper under the netting was another net Everything fell apart. On top of that also inside was a"gravy pack" that took up a lot of space in the wrap.

          I had already thawed it and wasn't going to haul a pile of thawed turkey parts back to Publix. I stuck the pieces on a Trompo with the dark meat on the bottom and Xmas treed it with thin sliced bacon rolled in poultry seasoning. It worked out but I paid way too much for it. P*ssed me off. I'm calling for a Butterball Boycott!!!

              Yeah I've been pissed off before with Jenni-o and Butterball. It seems unless you buy a whole bird those companies processed suck ass. They're always pre-brined, amd/or butchered to death. I've actually written Jenni-O and told them as much. I can't afford 'REAL' Butcher turkey. WTF food companies are selling people nowadays really chaps my buttered biscuits and not in a good way.

                Wife buys the J-O crap. Usually ground tho. Still... it’s crap. And for that price I can buy a bird and grind it. But Oh No... it’s not the same. Well fuck me in the &&$^..no it’s better.
