Took some nice free range chicken thighs, and gave them a shake or three of Fire and Smoke Society's "Coop de Thrill Rub for Chicken and Pork". Threw them on the Weber, and let them do there thing until 180°F. Used a chunk of hickory for some smoke. Quick cook took maybe 30 minutes. Rub is pretty good. Was very black peppery. Also gave a great color with the smoke.
