  • Chicken Quarters in a Traeger Little Tex.

    Nice and brisk outside at 44 degrees and we are going to cook a modest dinner entree for two. Chicken Quarters.

    Two quarters ready for some trimming and spices.


    Trimmed and spice up.

    Traeger is smoking nicely on start up. I sure love our stack.


    I elevated a grill over a pan with spiced flavored apple juice for moister and flavor. Time to put them there bird pieces on.

    love the stack....wish i had a patio to put my smokers under.....looks like a great start....

      Run um on smoke which ran at about 161 degrees for one hour and pulled the chicken out. Ran the Traeger up to 400 degrees put the chicken back on until an internal temp of 180 degrees. This runs out the fat very nicely.
