  • Poblano stuffed chicken breasts

    Get the big jumbo boneless whole breasts for this. Cut a deep slit and form a nice pocket in the breast. Season the pocket with your favorite spicy rub then crumple a foil ball to stuff in the pocket make it as big as is reasonable. On to the grill indirect heat for 5 or so minutes to set the pocket.


    Mix up stuffing with chopped roasted poblano, white cheddar, yellow sharp cheddar, cojita cheese lime juice, minced garlic a little white onion and a egg. Salt pepper to taste mix and stuff. Top that with more cheese and back onto indirect heat about 275-300* with smoke. I cooked mine to internal 165*
