Pineapple Hot Sauce

  • Pineapple Hot Sauce

    I do love this sauce. make my own but found this, great on wings which the pack howls over But we do them so many different ways. the fav has always been gangrene wings. a 1/4 tequilla while cooling helps.
    • ½ pineapple
    • 1 red serrano chili
    • 1 teaspoon salt
    • 1 tablespoon sugar
    • 1 teaspoon cayenne pepper powder
    • 1 cup vinegar



    Instructions
    • Remove the skin from the pineapple and cut it into cubes.
    • Place a heavy-bottomed saucepan over medium heat.
    • Add the pineapple and cook for 2 minutes, stirring continuously to avoid sticking.
    • Add the chopped serrano pepper to the pan along with salt, sugar, cayenne pepper powder, and vinegar.
    • Turn the heat to low and simmer for 10 minutes, then cool for a further 10 minutes.
    • Pour the mixture into a blender and blend until completely smooth.
    • You can enjoy the sauce with a little texture, or you can strain it for a smooth light sauce.








    Notes


    Store in an airtight container in the refrigerator. The pineapple hot sauce should keep for up to 10 days.

    Sounds good. But where do you find a red serrano? Every pepper in the stores around here is green. Minus the bell peppers of course.

      The red serranos are the green ones that have stayed on the plant longer and ripened. You should se them in the produce area of the stores. fresnos will be the a good choice also. habs will be great also. May self i am not a huge fan of serranos, but i do use the a lot as an add to salsas. really just use your fav. pepper or ask the produce dude to get some in.

        Yeah, in my almost 50 years here I've never seen a red one in any store. I'll have to ask and see if they'll even order them.

          I used to see them at Winco in Tigard. But I haven't lived that way in years.
